how much will it change my water by? yeast method in a 10 g. airstone or intake diffuse.

Depends on KH of tank, but normally expect DIY to give you 0.8 to 1.0 reduction in pH. Could be more in lower KH water, so do test KH and pH to be certain of input levels.

Is this for a saltwater tank or a freshwater tank? You have it posted in the Saltwater section and until Floridaboy posed that link I've never heard of CO2 injection in a saltwater tank.
