He's not a fish - but he was an undersea Hanna Barbera cartoon character - Squiddly Diddly the Show biz squid.

I can't believe that you named Blinky the three eyed fish from the Simpsons (who also appeared in Futurama) and you forgot General Sherman the 500 pound catfish that Homer catches when he and Marge go to a marriage counseling camp.

There is also King Arthur and Merlin the wizard as fish in the Disney cartoon The Sword in the Stone. And do the Snorkels count? Do any of you remember that cartoon? Thats all I can think of for now.

Oh yeah, there are also the dancing fish from Disney's Alice in Wonderland. They are dancing around the fire on the rock to get dry... At least I think there are some fish in there.

Ooo! There used to be this show on Nickelodeon called Doug, and there was an entire episode about his neighbor (who was purple) who had to catch this three finned fish b/c it took his wallet. I can't remember what the fish was called (b/c it had a really wierd name) but maybe someone else here knows what I'm talking about. Or maybe I'm just crazy...

Along the line of fish in Disney movies, there's the loooonnnng-tailed fish in a segment of the first "Fantasia" - they swirl, slink, dance, and hide in time to music from the "The Nutcracker" ("Arabian Coffee"?)

Also, back a ways on TV, there was Abe Vigoda's character on "Barner Miller" - "Fish"

A few of you mentioned fish in the simpsons. In one episode marge tells homer that he never finished filling the aquarium(cut to scene where goldfish is hanging on the edge of an overflowing tank with a hose in it).
