OK I have seen many different electronic handheld pH Testers but I can't seem to find any for CO2, NO2/3, Ammonia, etc etc etc.....

Are they even made??

Not that I know of except for the ammonia. Seachem makes the ammonia alert. You stick it in your tank and whentheres a problem it changes colors. I have one on both my tanks I love it.

I wouldnt trust that thing.....I bought one as well....had it in with my GSP.
Stayed yellow (normal) and never changed......after a few weeks I checked the water anyways and I had 1.5 - 2.0 ppm ammonia......scared me....

So I took the ammonia alert out and put it in my goldfish tank to see if it would change (which it should have) but it didn't do anything.....

You are the first person I have ever heard say that. Most people love theirs. And the alerts are highly rated.I wouldnt have a tank up without one. I do test my ammonia on my own every couple of weeks to make sure. Sounds like you just got a bad one. And also what do you use to check your ammonia?? Test strips??

I'd be willing to bet better money on your test strips were wrong NOT the alert. THAT is quite common. you need to get an ammonia test kit.
