this is my second year of keeping guppies. while I am quite knowledgeable about guppies, I know not much about goldfish.
my water in my 12 gallon tank is currently filled with "guppy" water. what changes would I need to make it "goldfishy"???
and are there any important things I need to know?

Unfortunately I'd have to say a 12g is too small for even one fancy goldfish. A) they get too big and b) they poop too much. You'd be doing water changes every other day to keep up with the waste production _________________ "Feminae bene moratea historiam raro faciunt" |

A 12 gallon would be fine for a small goldfish for alittle while and then you would need to upgrade to a 20 or 29 gallon tank for the goldfishes permanent home. _________________ Life is better with fish

oh, OK then. DOH.
to change the water wouldnt I just empty the tank, and then fill the tank again with conditioned water and stabilise the pH? And also eliminate the ammonia and everything???

Just do a 50 percent water change Goldfish will handel almost anything as long as you go through the aclamation process rather than just dumping them in.
Gold fish are very hardy and have more amonia tolerance than most fish, but that doesn't mean its good for them of course. They just create more with waste. You will need a bigger tank down the road keep your test kit handy _________________ Glitch your mind so chaos=logic
