I know most people use instant ocean, but I happened to run into a guy who seems to be using just red sea rock salt in his tank from the super market. Its pure salt no additives and I wouldn't think it does crap for the pH but I figured I would ask. How does this work? is it possible to use a DIY type salt?

No, all such "attempts" are pretty much doomed to failure. You need Mg and Ca, as major players, and that's just for starters. Pure Sodium Chloride is not an adequate salt mix.
