I currently have 1 Amano Shrimp and 4 Assassin Snails, but I want to add:

10 x Red Cherry Shrimp
4 x Amano
6 x Green Shrimp...

Will this be OK, or will they fight or eat eachother?

I don't think you'll experiance any problems with the shrimp. My question would be WHAT do you plan on feeding the Assassins?

And what size of tank are they all going in?

Well, I just let them roam and don't feed them anything, as I don't know what to give them?

They will be going in a 95 litre tank along with...

2 x Bristlednose Pleco's
1 x Penguin Tetra
2 x Peppered Cory's
1 x Guppy
2 x Baby Bristlenose
1 x Small Flying Fox...

Is this OK Question

Assassins are used by most people to control other types of snails such as pond snails or Malaysian trumpet snails. The tetra would probably be best left out, because this type of fish, along with most tetras need a group of at least 6 fish, but more is always better.

The same thing goes for cories, they have a need for a minimum of 4 fish total in their shoal, but 6 is usually the number people go with.
Peppered cories also get larger than most cory species, I've heard they get up to about four inches.

Guppies are more social fish, and would want a group of at least 2-3 fish. I have no idea if your tank is big enough for a flying fox, but I would be concerned about it harassing the shrimp. It might also stress out the slower moving tetras and plecos.

I think that you might be able to manage the 4 bristlenose, but you might have territory issues as they get larger.
If you want to keep with the fish you already have planned for this tank I would look at a stocking plan more like this:
1 x Bristlenose Pleco
6 x Penguin Tetra
4 x ? Cories
1 x Flying Fox?

or

4 x Bristlenose Pleco (2M-2F)
3 x Guppies (3M)
6 x Penguin Tetra

What species are the green shrimp?
