OK, and all 3 of my little guys are still alive. Keeping my fingers crossed that they will get to meet everyone else!

What percentage of the water should be changed twice a week? I'm guessing in a 20 gallon tank probably 10-30%?

That sounds about right - don't test again unless you see the fish showing red gills or breathing heavily but these are signs to do a water change if you haven't for more than a couple of days.
After another month you should see the nitrates rising.

OK. Should I buy just a simple test kit or one of the masters?
I will also have some nice big fake plants as well very soon!

Either a mini master kit or a nitrite kit will do. You need to know when all the nitrite is being processed.
Fake plants don't affect water chemistry.
