...which brings up another question-how do I know if I need more N,P, or K? Do I just wait until leaves start turning yellow? How do I know which I need and how do I know that it isn't the trace elements I need and that it is NPK?

test kits, test kits, test kits! - if you've got the money, if not...

try Tom Barr's ESTINDX

I like Chuck's dosing guide for npk... should give you a desired level of dissolved for each...
